Cauliflower Rice Veggie Bowl 🥦🍚
Ingredients:
2 cups cauliflower rice 🥦
1 tablespoon olive oil 🫒
1/2 cup shredded carrots 🥕
1/2 red bell pepper, chopped 🫑
1/2 cucumber, diced 🥒
1/4 cup red cabbage, thinly sliced 🥬
2 tablespoons tahini 🥄
1 tablespoon lemon juice 🍋
1 teaspoon maple syrup 🍁
1 clove garlic, minced 🧄
Salt and pepper to taste 🧂
Optional: pumpkin seeds or sunflower seeds for topping 🌻
Instructions:
Heat olive oil 🫒 in a skillet and sauté cauliflower rice 🥦 for 5-6 minutes, until tender. Set aside.
In a bowl, whisk together tahini 🥄, lemon juice 🍋, maple syrup 🍁, garlic 🧄, salt, and pepper 🧂 to make the dressing.
In serving bowls, layer cauliflower rice, carrots, bell pepper, cucumber, and red cabbage.
